My pleasant distraction, lately, has been cooking. I forgot how just getting in the kitchen and cooking a healthy meal can lift my spirits. Time to take just for myself. Here is a soup recipe both healthy and simple. Enjoy this soup on a cold Winter day.
Easy Chicken Vegetable Soup
4-6 Cups Chicken Broth
2 Cups Boneless Chicken Breast (diced)
4 Large Carrots (sliced)
4 Celery Sticks (sliced)
2 Tablespoons Basil (Dried or fresh chopped)
1 Small Onion (Chopped)
3-4 Tablespoons Butter
Salt and Pepper as needed
In a large pot melt butter. Add onions, basil, salt and pepper.
Cook and stir on medium heat until onions are slightly soft or translucent. Add diced chicken breast and cook 3-5 minutes adding salt and pepper for seasoning of chicken as needed. Add celery and carrots and broth. Continue cooking until chicken is well done and carrots and celery are tender.
